Actuall...I did the double up on your recipe thing. Actually, what I really did (for caseroles and such) is make one recipe but heavy up on the ingredients... then instead of a 9x13 pan I would use 2 disposable 8x8 pans. For your small family that still probably gives enough food for one meal and some left overs, and an entire pan for the freezer (make sure you label everything with directions, baking times and temps.) I tried to do at least one of these "double up" meals each week. That way it wasn't such a burden.<BR/><BR/>A couple other ideas? <BR/>- when browning ground beef/turkey, do 2-3 pounds instead of 1, then freeze the rest. You can then thaw the cooked meat and add it to whatever (tacos, casserole, etc.) I also made a bunch of meatballs for the freezer... which, by the way, are great for toddler lunches! I need to do that again!<BR/><BR/>- grill extra chicken. If you've got the grill going, do up a bunch of extra chicken breasts, then they are ready for cutting up in the freezer, or freezing whole and reheating as a meal later. :) I love grilled chicken in salads. :)<BR/><BR/>I'll let you know if I think of anything else. Above all... don't over do it... and I mean what you demand of yourself more than anything. We get so worked up about what we want to do, then kick ourselves because we're too tired to do it. Do things in little bits... if your house isn't clean, don't stress. If you can't get to that and playing with your boy, maybe there are a couple teens in your church that would come clean for you for a nominal fee (or free as a ministry--you could always get a thank you gift for them of some sort).
