I wish I could...


1. I would love to take a photography class, and have a really nice camera to take some awesome pictures.


2. I would love to have a freezer full of frozen dinners all ready for me to prepare. And knowing that I created each meal. I have been researching the Month of Freezer food cooking and I would love to do this, but I can't seem to get my self motivated to spend a whole day cooking to fill my freezer. Several things I have read say to start slow. To double up your recipe that you are making one night and freeze the extra for later. Good and easy way to start.


3. Want to plant Sunflowers in my back yard! Tall Sunflowers.


4. My friend Alyson is a great Garage Sale hunter and is and expert at finding such good deals to re-sell and make a little bit of cash.


5. I wish that I had some great hobby that I could make a little bit of money on. My friend Jamie makes vinyl letters for tiles, or wood and they are beautiful. I get a new monthly saying to stick on a tile each month and I love looking at the sayings. She also made us such a beautiful saying block last September when our second foster baby left. It was a difficult time, but the saying is so beautiful and helped me to get through each day.

I could never cook all day either. I like the idea of just making an extra bit and freezing it. Easier.
I want sunflowers too!

Oh, I have a list like this. I rarely get to cross anything off. I wish I prepared fresh vegetables twice a week (not that anyone would eat them). I wish I had a passion too, that could also be my job!

I would love to have a freezer full of meals too. I've done exchanges with Dinner Divas and another meal exchange group, but my husband isn't always fond of the meals. He says it's because he likes my cooking the best! Egads!

Our Ward did a class on Freezer Cooking, Once A Month Cooking. I got a handout from it. I can give you a copy of it if you'd like. It is very informative and, if you can do it, sounds great! I, of course, haven't tried it yet! :)

I did the double up on your recipe thing. Actually, what I really did (for caseroles and such) is make one recipe but heavy up on the ingredients... then instead of a 9x13 pan I would use 2 disposable 8x8 pans. For your small family that still probably gives enough food for one meal and some left overs, and an entire pan for the freezer (make sure you label everything with directions, baking times and temps.) I tried to do at least one of these "double up" meals each week. That way it wasn't such a burden.

A couple other ideas?
- when browning ground beef/turkey, do 2-3 pounds instead of 1, then freeze the rest. You can then thaw the cooked meat and add it to whatever (tacos, casserole, etc.) I also made a bunch of meatballs for the freezer... which, by the way, are great for toddler lunches! I need to do that again!

- grill extra chicken. If you've got the grill going, do up a bunch of extra chicken breasts, then they are ready for cutting up in the freezer, or freezing whole and reheating as a meal later. :) I love grilled chicken in salads. :)

I'll let you know if I think of anything else. Above all... don't over do it... and I mean what you demand of yourself more than anything. We get so worked up about what we want to do, then kick ourselves because we're too tired to do it. Do things in little bits... if your house isn't clean, don't stress. If you can't get to that and playing with your boy, maybe there are a couple teens in your church that would come clean for you for a nominal fee (or free as a ministry--you could always get a thank you gift for them of some sort). When people start asking if there is anything they can do, say "actually, my kitchen floor really needs to be mopped and I just don't have the energy."

It's amazing how God can provide things like that!
